There are several fish that I have yet to have at the end of my line and a burbot is one of them.  But everyone tells me how aggressive they are and that they are supposed to be great to eat!

I've heard the meat of the burbot is similar in texture and flavor to that of lobster, but I'll have to wait to pass along my actual opinion until after I get to try one.

But like any fish, you have to know how to clean them once you've harvested them. The Wyoming Game and Fish department put out a very helpful video showing us how to clean a burbot and get to the real prize - eating them!  Watch the video above for a great instruction on how to process a burbot once you've caught one.
