On a Friday night when one is looking for that special meal. And we all know that there are many places in the windy city to grab a meal. I was allowed back stage tonight into the kitchen of The Fort Saloon and Eatery. It was incredible. Noise level deafening. Controlled chaos. But at this particular restaurant you had Cat Fish Friday (fresh...fresh cat fish) and the soup was home made French Onion. Their chef Virginia created the most tasty french onion soup I've eaten in years. And the Ruben was to die for. Seriously. For incredible food tonight it was the Fort. The owner Kevin Ujvery was actually on the line making sure the food was hot, correct, and consistent. His kitchen crew were on their toes. Servers were attentive.
