They say breakfast is the most important meal of the day. Local chef Robert Bowen agrees. Bowen, who runs the kitchen at the Suite Bistro in downtown Cheyenne, is one of 135 chefs from across the country competing in the Thomas Hometown Breakfast Battle.

Bowen's entry is the Wyoming Benedict; a twist on traditional eggs benedict featuring poached eggs, potatoes, bacon, locally raised Bison sirloin and sage Hollandaise sauce over an English muffin. (Check out the pictures, it looks amazing).

Bowen grew up in Cheyenne and began his career nearly 20 years ago working as a dishwasher. After graduating from culinary school in Portland, Oregon, he returned to his hometown and founded the Suite Bistro.

Another Wyoming chef, Matty Melehes from the Roadhouse and Brewing Company in Jackson, is also competing in the breakfast battle. His entry is Wyoming Style Scotch Eggs, which features a breaded egg, soft boiled and then deep fried, along with venison chorizo and Hollandaise sauce served over an English muffin.
